Besides Real Estate, another of my passions is cooking and baking. For years I have shared my favorite recipes with my clients and now I would like to share them with you.
Carrot Pineapple Cake
This is a picture of one I made. It was Soooooo good! This recipe is from the Pillsbury Complete Book of Baking. I hope you like it.
1 1/2 cups all purpose flour
1 cup whole wheat flour
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon salt
1 cup sugar
2/3 cup oil
1 (8-oz) can crushed pineapple
in its own juice, undrained
1/2 cup egg product
2 teaspoons vanilla
2 cups shredded carrots
1/2 cup raisins
Creamy Frosting
4 oz light cream cheese, softened
2 tablespoons butter, softened
1 cup powdered sugar
1 teaspoon vanilla
1 teaspoon grated orange peel
1 tablespoon of orange juice
Heat oven to 350. Grease and flour 13 x 9 inch pan. In medium bowl, combine both flours, baking soda, cinnamon and salt; set aside. In large bowl, combine sugar, oil, pineapple, egg product and vanilla; beat well. Stir in flour mixture; mix well. Stir in carrots & raisins. Pour batter into greased & floured pan. Bake at 350 for 30 to 40 minutes. Cool completely In small bowl, combine cream cheese & butter; beat until smooth, gradually beat in powdered sugar, vanilla, orange rind & juice . Spread over cooled cake.
2 7 oz. cans of salmon drained
3 cups uncooked macaroni noodles
1/2 cup finely chopped celery
1/3 cup sliced green onions and a bit more to garnish.
1/2 cup sour cream
2 tsp. Grey Poupon
1/2 cup Mayo
2 cloves of garlic crushed
2 small Zucchini, sliced
1 cup shredded cheddar
1 medium tomato seeded & chopped
1 tbsp. capers
Cook noodles according to pkg. directions. Drain and set aside. While noodles cook, blend celery, capers, tomato, onion, sour cream, mayo, mustard, garlic, salmon and 3/4 cup of the cheese. When pasta is cooked, add it to the creamy salmon mixture & combine. Spray or butter a 2 qt. casserole dish. Place 1/2 mixture in dish, top with 1/2 of the slices of zucchini. Put in 2nd half of mixture and top with the rest of the zucchini then add the rest of the cheese.( if you like lots of cheese, add more )
Bake in 350 oven for 30 to 35 min. or till golden brown. Remove from oven and let sit for at least 10 min. to cool. Garnish with a bit of green onion.
Serves four to six
Pea Salad
I tried this for the first time at a restaurant on the Oregon coast. They offered it with their Burgers instead of fries and I instantly fell in love with this salad. I tried a few recipes till I found this one which is, in my opinion, right on the money from the first one I had. I hope you enjoy it as much as I do. My neighbors and my husband, (who were the Guinea Pigs for this recipe), really liked it.
4 cups of frozen peas thawed
4 oz of Bleu Cheese crumbled (a little less if it is a strong Bleu Cheese)
1/4 cup finely chopped water chestnuts
1/4 cup finely chopped green onion
1/2 cup of plain yogurt
1/4 cup chopped parsley
Salt & pepper to taste
Mix all ingredients together and let sit at least 1 hour before serving
